Lorsqu\u2019on consid\u00e8re la quantit\u00e9 de riz produite dans le monde et l\u2019augmentation pr\u00e9vue de la production animale, la stabilisation du son de riz aux fins de cr\u00e9er un ingr\u00e9dient pour l\u2019alimentation animale de haute qualit\u00e9 est devenue un sujet du plus grand int\u00e9r\u00eat pour les \u00e9leveurs.<\/p>\n<p>Le riz \u00e0 l\u2019\u00e9tat brut, \u00e9galement connu sous les noms de riz paddy ou de riz non d\u00e9cortiqu\u00e9, est form\u00e9 de grains blancs riches en amidon (l\u2019endosperme), entour\u00e9s d\u2019une mati\u00e8re marron (le son) et envelopp\u00e9s par une coque ext\u00e9rieure (la balle). Le son de riz est un sous-produit du processus de d\u00e9corticage du riz, consistant \u00e0 s\u00e9parer m\u00e9caniquement la coque et le son pour obtenir le riz blanc.<\/p>\n<p>Le son de riz est un ingr\u00e9dient riche, parce qu\u2019il contient&#160;:<\/p>\n<ul>\n<li>Huile de bonne qualit\u00e9* 15 \u00e0 22&#160;%**<\/li>\n<li>Prot\u00e9ines brutes 15 \u00e0 18&#160;%**<\/li>\n<li>Fibres 7 \u00e0 >&#160;10&#160;%**<\/li>\n<\/ul>\n<p>Le son de riz pr\u00e9sente des propri\u00e9t\u00e9s attrayantes et a une valeur nutritive \u00e9lev\u00e9e, mais il poss\u00e8de \u00e9galement un syst\u00e8me enzymatique unique et puissant qui s\u2019active lors du processus de d\u00e9corticage. Il provoque une hydrolyse rapide de l\u2019huile contenue dans le son de riz en acides gras libres et glyc\u00e9rine, ce qui affecte n\u00e9gativement la palatabilit\u00e9 et la qualit\u00e9 du son de riz. Le taux d\u2019hydrolyse varie avec la temp\u00e9rature et d\u2019autres facteurs, mais peut provoquer la conversion en acides gras libres d\u2019environ 30 \u00e0 50&#160;% de l\u2019huile, en l\u2019espace d\u2019une semaine, dans des conditions de stockage en climat tropical. Il est important de stabiliser le son de riz, parce que plus la teneur de l\u2019huile en acides gras libres est \u00e9lev\u00e9e, plus les pertes sont \u00e9lev\u00e9es lors du raffinage en huile alimentaire. En ce qui concerne la consommation humaine, l\u2019American Heart Association a reconnu que le son de riz participait \u00e0 la diminution du cholest\u00e9rol.
