Certains ingr\u00e9dients peuvent \u00eatre affect\u00e9s n\u00e9gativement par la chaleur et la pression g\u00e9n\u00e9r\u00e9es au cours de l\u2019extrusion. Dans cet article, je vais passer en revue quelques exemples pour vous donner une id\u00e9e de ce qui peut arriver aux ingr\u00e9dients et comment corriger ou minimiser les effets rencontr\u00e9s.<\/p>\n<p>Les ingr\u00e9dients les plus importants qui peuvent \u00eatre affect\u00e9s par l\u2019extrusion sont les vitamines. Les vitamines peuvent \u00eatre quelque peu fragiles et avoir une courte dur\u00e9e de vie, m\u00eame sans \u00eatre soumises \u00e0 l\u2019extrusion. Un exemple est la vitamine\u00a0C, qui est particuli\u00e8rement sensible \u00e0 la chaleur. La perte subie au cours de l\u2019extrusion peut \u00eatre surmont\u00e9e par une formulation sup\u00e9rieure de 25\u00a0% \u00e0 la dose normale.
