Les PST peuvent \u00eatre utilis\u00e9es de bien des fa\u00e7ons, mais les deux utilisations les plus courantes sont en tant que \u00ab\u00a0meat extender\u00a0\u00bb (association avec la viande) et substitut de viande. Un meat extender est en g\u00e9n\u00e9ral utilis\u00e9 en tant qu\u2019additif dans d\u2019autres produits \u00e0 base de viande comme les saucisses, les hamburgers, le poisson, etc. Les PST en tant que substitut de viande peuvent \u00eatre consomm\u00e9es pour apporter des acides amin\u00e9s dans tous les cas o\u00f9 la viande n\u2019est pas disponible ou souhait\u00e9e. Tandis que le substitut de viande est un produit contenant uniquement des PST, le meat extender est plus souvent utilis\u00e9 comme remplacement de la viande. Si l\u2019on se r\u00e9f\u00e8re \u00e0 un cours acc\u00e9l\u00e9r\u00e9 de l\u2019universit\u00e9 Texas A&amp;M, le march\u00e9 semble plus important pour les meat extenders que pour les substituts de viande. Les meat extenders occupent environ 70\u00a0% du march\u00e9, laissant \u00e0 peu pr\u00e8s 30\u00a0% pour les substituts de viande.<\/p>\n<p>Produire des PST de bonne qualit\u00e9 est important, mais les mesures de qualit\u00e9 sont tr\u00e8s controvers\u00e9es, et les opinions des experts divergent beaucoup au sujet de ce que cela entra\u00eene. Tout le monde semble s\u2019accorder sur le fait que la capacit\u00e9 d\u2019absorption est un \u00e9l\u00e9ment cl\u00e9 pour la qualit\u00e9, et une moyenne correcte dans l\u2019industrie pour la capacit\u00e9 d\u2019absorption est d\u2019environ 300-400\u00a0%. Certains pays pr\u00e9f\u00e8rent les PST fabriqu\u00e9es \u00e0 partir de farine de tourteau de soja (farine obtenue par un proc\u00e9d\u00e9 d\u2019extraction par solvant) qui contient tr\u00e8s peu de mati\u00e8res grasses, normalement environ 1\u00a0% ou moins. Certains pays exigent du soja contenant 45\u00a0% de prot\u00e9ines alors que d\u2019autres demandent au moins 50\u00a0%, mais cela varie plut\u00f4t en fonction de la qualit\u00e9 du soja que du proc\u00e9d\u00e9. D\u2019autres pays pr\u00e9f\u00e8rent des PST fabriqu\u00e9es \u00e0 partir de farine obtenue par proc\u00e9d\u00e9 m\u00e9canique (r\u00e9f\u00e9rence \u00e0 l\u2019association extrudeuse + presse) dans lesquelles la teneur en mati\u00e8res grasses est de 6 \u00e0 8\u00a0% \u00e0 peu pr\u00e8s. Le probl\u00e8me rencontr\u00e9 par certains est que toutes les extrudeuses n\u2019ont pas la capacit\u00e9 de produire des PST \u00e0 partir d\u2019une farine ayant 6 \u00e0 8\u00a0% de mati\u00e8res grasses.<\/p>\n<p>Pour que les PST semblent plus app\u00e9tissantes au consommateur, il existe diff\u00e9rentes couleurs qui peuvent \u00eatre m\u00e9lang\u00e9es pour leur donner la m\u00eame apparence que la viande dans laquelle elles sont ajout\u00e9es. La couleur la plus g\u00e9n\u00e9ralement utilis\u00e9e est caramel, mais le rose est \u00e9galement utilis\u00e9 tr\u00e8s souvent du fait qu\u2019il est plus facile de le m\u00e9langer avec les saucisses et hamburgers. Par contre, en Asie, ils pr\u00e9f\u00e8rent que les PST soient les plus claires possibles pour les m\u00e9langer au poisson.<\/p>\n<p>Chez Insta-Pro International, nous faisons des PST issues de farine \u00e0 6-8\u00a0% de mati\u00e8res grasses depuis de nombreuses ann\u00e9es, et nous pouvons fournir de l\u2019aide pour ce proc\u00e9d\u00e9 dans le monde entier (except\u00e9 les \u00c9tats-Unis et le Canada). Une autre caract\u00e9ristique prise en compte dans la qualit\u00e9 des PST est sa dur\u00e9e de conservation, \u00e0 cause des ressources limit\u00e9es pour les remplacer dans certaines r\u00e9gions. Les PST fabriqu\u00e9es avec nos machines et proc\u00e9d\u00e9s ont d\u00e9montr\u00e9 une dur\u00e9e de conservation de 1,7 ans environ, ce qui correspond aux conditions moyennes de dur\u00e9e de conservation\/stockage dans le secteur.<\/p>\n<p>La d\u00e9finition de la qualit\u00e9, concernant les PST, varie grandement, mais actuellement les prix les plus hauts sur le march\u00e9 concernent le soja bio transform\u00e9 m\u00e9caniquement. L\u2019extraction m\u00e9canique fait appel au proc\u00e9d\u00e9 ExPress\u00ae (extrudeuse + presse + extrudeuse pour fabriquer les PST, sans usage de solvant), et la graine elle-m\u00eame doit \u00eatre bio. Cela ne veut pas dire que produire des PST \u00e0 partir de farine de tourteau de soja (avec extraction par solvant) sera moins rentable, mais cela peut affecter la \u00ab\u00a0qualit\u00e9\u00a0\u00bb aux yeux de certains pays.
