Nous allons maintenant nous concentrer sur deux autres facteurs importants&#160;: la <em>temp\u00e9rature <\/em>et la <em>vitesse d\u2019alimentation.<\/em><\/p>\n<p>1.<strong> La temp\u00e9rature<\/strong> &#8211; Il semble que plus la temp\u00e9rature \u00e0 laquelle le soja est extrud\u00e9 est \u00e9lev\u00e9e, meilleur est le fonctionnement du proc\u00e9d\u00e9. Une temp\u00e9rature plus haute entra\u00eene un pourcentage sup\u00e9rieur de cellules rompues. C\u2019est une bonne chose pour l\u2019extraction de l\u2019humidit\u00e9, ainsi que pour la r\u00e9cup\u00e9ration de l\u2019huile. Nous recommandons que les extrudeuses dans les syst\u00e8mes ExPress\u00ae fonctionnent entre 310&#160;\u02daF (155&#160;\u02daC) et 320&#160;\u02daF (160&#160;\u02daC) maximum. Du fait du court s\u00e9jour dans l\u2019extrudeuse, le soja subit \u00e9videmment peu ou pas de dommages du point de vue nutritionnel, m\u00eame \u00e0 des temp\u00e9ratures de 330&#160;\u02daF (165&#160;\u02daC). Tant que la temp\u00e9rature est maintenue dans l\u2019extrudeuse, la presse fera son travail. Ceci est valable si la presse n\u2019a pas de pi\u00e8ces s\u00e9v\u00e8rement us\u00e9es&#160;; un sujet que nous aborderons bient\u00f4t.<\/p>\n<p>2.&#160;<strong>La vitesse d\u2019alimentation<\/strong> &#8211; La presse \u00e0 huile est comme une moissonneuse-batteuse, dans le sens o\u00f9 elle fonctionne plus efficacement lorsqu\u2019elle est pleine. Pleine, et non surcharg\u00e9e. Il peut s\u2019av\u00e9rer difficile de juger quand certaines presses sont pleines. Avec notre presse 1&#160;tonne\/heure, celle-ci ne tirera jamais le courant de pleine charge, m\u00eame quand elle est pleine. Notre presse 2 tonnes\/heure peut approcher, voire d\u00e9passer la capacit\u00e9 de pleine charge de l\u2019entra\u00eenement principal. Dans la plupart des syst\u00e8mes ExPress\u00ae, la capacit\u00e9 de production des extrudeuses est sup\u00e9rieure \u00e0 celle de la (des) presse(s) \u00e0 huile.<\/p>\n<p>La d\u00e9termination de la vitesse d\u2019alimentation correcte pour les extrudeuses r\u00e9clamera des v\u00e9rifications du tourteau final, dans les premi\u00e8res semaines de fonctionnement. Vous pouvez d\u00e9terminer votre cadence de production en r\u00e9cup\u00e9rant le produit de l\u2019extrudeuse pendant une minute, pour calculer votre d\u00e9bit horaire, et relever l\u2019amp\u00e9rage et la temp\u00e9rature de l\u2019extrudeuse. Les r\u00e9sultats de ces tests devraient \u00eatre compar\u00e9s avec un \u00e9chantillon de ce qui sort de la presse \u00e0 huile. Le taux d\u2019huile r\u00e9siduelle est alors analys\u00e9 dans ces \u00e9chantillons de presse. Comparez les \u00e9chantillons obtenus avec diff\u00e9rentes vitesses d\u2019alimentation pour d\u00e9terminer le r\u00e9glage pour lequel on obtient le plus d\u2019huile.<\/p>\n<p>Une remarque concernant ce genre de test&#160;: le r\u00e9sultat d\u00e9pend du soja brut. Il peut aussi y avoir une variation de la teneur en huile d\u2019une vari\u00e9t\u00e9 \u00e0 l\u2019autre. Il peut \u00eatre judicieux d\u2019ajouter un \u00e9chantillon des graines brutes pour les comparer au g\u00e2teau de soja final, ou au tourteau. De nos jours, les graines de soja sont cultiv\u00e9es pour obtenir une teneur en huile \u00e9lev\u00e9e. Aussi, dans certaines r\u00e9gions du pays, on cultive du soja qui offre de fa\u00e7on constante une teneur sup\u00e9rieure en huile, gr\u00e2ce aux conditions m\u00e9t\u00e9orologiques et aux propri\u00e9t\u00e9s de la terre. Couplez du soja \u00e0 haute teneur en huile avec une forte humidit\u00e9, et vous obtiendrez une teneur en huile r\u00e9siduelle \u00e9lev\u00e9e.<\/p>\n<p>La presse \u00e0 huile vous avertira si vous la surchargez. Une grande quantit\u00e9 de fines (souvent appel\u00e9es pieds) sortant entre les barres de la cage est une indication valable d\u2019une surcharge de la presse. Un exc\u00e8s de pieds peut aussi indiquer une forte humidit\u00e9. Un mouvement ou une oscillation de la vis d\u2019alimentation verticale est aussi un indice de surcharge. La surcharge a un effet ind\u00e9sirable car elle r\u00e9duit la dur\u00e9e de s\u00e9jour du tourteau dans la presse et entra\u00eene davantage de r\u00e9sidus.<\/p>\n<p>Vous devriez maintenant avoir une meilleure compr\u00e9hension des param\u00e8tres de transformation, pour la transformation du soja.
