C\u2019est le moment opportun pour parler des avantages et inconv\u00e9nients de l\u2019extrusion du soja entier, et de ceux de l\u2019extrusion du soja broy\u00e9.<\/p>\n<p>Pour moi, la question ne se pose m\u00eame pas. Broyer le soja avant extrusion est la seule mani\u00e8re de proc\u00e9der. Je vais commencer par \u00e9num\u00e9rer les avantages qu\u2019apporte l\u2019utilisation du soja broy\u00e9&#160;:<\/p>\n<p>1)&#160;<em>Consommation d\u2019\u00e9nergie r\u00e9duite<\/em> &#8211; Lorsque vous extrudez du soja entier, vous vous servez de l\u2019extrudeuse \u00e0 la fois comme broyeur et extrudeuse, ce qui augmente \u00e9norm\u00e9ment la consommation d\u2019\u00e9nergie.<\/p>\n<p>2)<em>&#160;Production augment\u00e9e<\/em> &#8211; En broyant ou en laminant le soja, le niveau de restriction n\u00e9cessaire pour une bonne extrusion du produit peut \u00eatre r\u00e9duit, ce qui permet d\u2019augmenter la capacit\u00e9 de 8 \u00e0 10&#160;%.<\/p>\n<p>3)&#160;<em>Usure r\u00e9duite des parties internes et externes de l\u2019extrudeuse<\/em> &#8211; La diminution de l\u2019usure de la chambre d\u2019alimentation et des vis d\u2019alimentation est significative. Toute personne ayant eu l\u2019occasion de transporter des graines de soja enti\u00e8res pourra vous dire combien elles sont abrasives (pour les \u00e9l\u00e9vateurs, les vis, les tambours de t\u00eate, etc.).<\/p>\n<p>4)&#160;<em>Produit fini plus fin et plus homog\u00e8ne<\/em> &#8211; Cela permet une meilleure combinaison avec d\u2019autres ingr\u00e9dients dans un m\u00e9lange final. Cela facilite \u00e9galement le processus de refroidissement, particuli\u00e8rement par temps chaud.<\/p>\n<p>5)&#160;<em>Meilleure qualit\u00e9 d\u2019extrusion vis-\u00e0-vis de la destruction de l\u2019ur\u00e9ase et des inhibiteurs de trypsine<\/em> &#8211; Comme le soja a \u00e9t\u00e9 broy\u00e9, la taille inf\u00e9rieure des particules permet d\u2019exposer une plus grande partie du soja \u00e0 la chaleur et \u00e0 la pression, n\u00e9cessaires pour garantir un produit fini de bonne qualit\u00e9.<\/p>\n<p>Si vous extrudez des graines enti\u00e8res de soja, vous pourrez remarquer une variation importante de la taille des particules dans le produit fini, avec les plus grosses particules quelquefois insuffisamment cuites.<\/p>\n<p>Le seul inconv\u00e9nient est la d\u00e9pense suppl\u00e9mentaire pour un broyeur \u00e0 meules ou un broyeur \u00e0 cylindres. Ceci est cependant compens\u00e9 par les \u00e9conomies r\u00e9alis\u00e9es sur les pi\u00e8ces d\u2019usure. La consommation d\u2019\u00e9nergie suppl\u00e9mentaire est compens\u00e9e par la consommation r\u00e9duite au niveau de l\u2019extrudeuse et l\u2019augmentation de la capacit\u00e9 de production. Les \u00e9conomies sur les pi\u00e8ces d\u2019usure et la qualit\u00e9 am\u00e9lior\u00e9e du produit font le reste.<\/p>\n<p>On peut utiliser un broyeur \u00e0 cylindres ou un broyeur \u00e0 meules. L\u2019objectif est de casser la graine de soja en 5 ou 6 morceaux. L\u2019un des probl\u00e8mes que l\u2019on peut rencontrer, suivant la mani\u00e8re dont le soja est introduit dans le doseur volum\u00e9trique, est la s\u00e9paration des coques. Si une tr\u00e9mie en surplomb est utilis\u00e9e pour alimenter l\u2019extrudeuse, les coques peuvent flotter sur le dessus et entra\u00eener une surchauffe quand la tr\u00e9mie est presque vide. Ce probl\u00e8me peut \u00eatre ma\u00eetris\u00e9 en utilisant des interrupteurs de niveau haut-bas dans la tr\u00e9mie. L\u2019interrupteur de niveau bas est l\u00e9g\u00e8rement sur\u00e9lev\u00e9 pour garder la tr\u00e9mie remplie en permanence au minimum \u00e0 1\/3 de sa capacit\u00e9. Cela garantit une densit\u00e9 de produit et un d\u00e9bit vers l\u2019extrudeuse homog\u00e8nes.<\/p>\n<p>Dans l\u2019ensemble, les avantages sont bien plus nombreux que les inconv\u00e9nients&#160;: le pr\u00e9-broyage des graines de soja est la meilleure option pour faire de l\u2019extrusion.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Ces derniers temps, la question d\u2019extruder les graines de soja enti\u00e8res ou broy\u00e9es est revenue plusieurs fois.
