Voici ces avantages&#160;:<\/p>\n<ul>\n<li>L\u2019extrusion correcte inactive les enzymes <a href=\"http:\/\/www.biology-online.org\/dictionary\/Hydrolytic\">hydrolytiques<\/a> telles que les lipases, les lipoxydases et les lipoxyg\u00e9nases, ce qui permet une augmentation de la dur\u00e9e de conservation de l\u2019huile insatur\u00e9e.<\/li>\n<li>Une extrusion bien r\u00e9alis\u00e9e lib\u00e8re les <a href=\"http:\/\/en.wikipedia.org\/wiki\/Tocopherol\">tocoph\u00e9rols<\/a> naturels, compos\u00e9s qui sont une forme de la vitamine E et qui sont des antioxydants qui favorisent la pr\u00e9servation de l\u2019huile.<\/li>\n<li>La plus faible teneur en eau du tourteau de soja extrud\u00e9 et l\u2019humidit\u00e9 peu \u00e9lev\u00e9e dans l\u2019huile extrud\u00e9e-press\u00e9e permettent \u00e9galement une conservation plus longue.<\/li>\n<\/ul>\n<p>Dans la mesure o\u00f9 le tourteau fra\u00eechement extrud\u00e9 ou l\u2019huile fra\u00eechement extrud\u00e9e-press\u00e9e ont une faible teneur en acides gras libres, ont un faible indice de peroxyde et ne pr\u00e9sentent pas d\u2019activit\u00e9 enzymatique, la qualit\u00e9 peut se d\u00e9grader s\u2019ils ne sont pas trait\u00e9s de mani\u00e8re ad\u00e9quate apr\u00e8s extrusion ou extrusion-pressage.<\/p>\n<p>Les facteurs suivants, entre autres, diminuent la dur\u00e9e de conservation de ces produits extrud\u00e9s&#160;:<\/p>\n<ol>\n<li>Absence de refroidissement imm\u00e9diat du tourteau et de l\u2019huile.<\/li>\n<li>Exposition \u00e0 l\u2019oxyg\u00e8ne et \u00e0 la lumi\u00e8re directe.<\/li>\n<li>Contact avec des mati\u00e8res pr\u00e9sentes en quantit\u00e9s infimes qui peuvent occasionner une oxydation (fer, zinc, mangan\u00e8se).<\/li>\n<li>Contamination par des bact\u00e9ries qui peuvent produire des enzymes hydrolytiques.<\/li>\n<\/ol>\n<p>Pour conclure, vous pouvez trouver des \u00e9tudes qui attestent de la longue dur\u00e9e de conservation du soja, ou d\u2019autres ol\u00e9agineux, transform\u00e9s correctement et pour lesquels les pr\u00e9cautions ci-dessus ont bien \u00e9t\u00e9 prises.
