La mani\u00e8re dont le soja est transform\u00e9 influence directement la disponibilit\u00e9 des acides amin\u00e9s et l&rsquo;utilisation de l&rsquo;\u00e9nergie, ce qui d\u00e9termine en fin de compte le co\u00fbt de l&rsquo;alimentation et les performances des animaux.<\/p>\n<p><strong>L&rsquo;extrusion \u00e0 sec \u00e0 haut cisaillement (HSDE) <\/strong>et<strong> l&rsquo;expansion<\/strong>, deux proc\u00e9d\u00e9s courants pour les ingr\u00e9dients destin\u00e9s \u00e0 l&rsquo;alimentation animale, font tous deux appel \u00e0 la chaleur et \u00e0 la pression. Cependant, l&rsquo;<em>intensit\u00e9, la dur\u00e9e et les m\u00e9canismes<\/em> de ce traitement thermique ont une incidence significative sur les r\u00e9sultats nutritionnels.<\/p>\n<p>Dans cette premi\u00e8re partie, nous explorerons les principes fondamentaux de l&rsquo;influence de ces deux m\u00e9thodes de transformation sur la disponibilit\u00e9 des nutriments et les raisons pour lesquelles la pr\u00e9cision est importante lorsqu&rsquo;on travaille avec du soja entier. Ensuite, dans la partie suivante, nous nous pencherons sur les donn\u00e9es issues des essais comparatifs entre les deux.<\/p>\n<p><strong>Pourquoi le soja entier n\u00e9cessite un traitement minutieux<\/strong><\/p>\n<p>Le soja entier est appr\u00e9ci\u00e9 pour sa combinaison de prot\u00e9ines de haute qualit\u00e9 et d&rsquo;\u00e9nergie concentr\u00e9e provenant d&rsquo;huile naturelle ; en m\u00eame temps, le soja cru contient des facteurs antinutritionnels, tels que des inhibiteurs de trypsine, qui doivent \u00eatre d\u00e9sactiv\u00e9s. Le d\u00e9fi consiste \u00e0 appliquer suffisamment de chaleur pour neutraliser ces compos\u00e9s sans surtraiter et endommager les nutriments sensibles \u00e0 la chaleur, en particulier les acides amin\u00e9s.<\/p>\n<p>L&rsquo;un des principaux objectifs de la transformation du soja est de maximiser la digestibilit\u00e9 des acides amin\u00e9s tout en minimisant les dommages caus\u00e9s par la chaleur. Cela rend le contr\u00f4le du traitement tout aussi important que l&rsquo;intensit\u00e9 du traitement.<\/p>\n<p>Outre la qualit\u00e9 des prot\u00e9ines, la transformation d\u00e9termine l&rsquo;efficacit\u00e9 avec laquelle les animaux peuvent utiliser l&rsquo;\u00e9nergie contenue dans le soja entier.<\/p>\n<p>Les apports thermiques et m\u00e9caniques influencent :<\/p>\n<ul>\n<li>Lib\u00e9ration et disponibilit\u00e9 des graisses<\/li>\n<li>Modification de l&rsquo;amidon<\/li>\n<li>\u00c9nergie m\u00e9tabolisable totale<\/li>\n<\/ul>\n<p>Sans un cisaillement suffisant et une application pr\u00e9cise de la chaleur, une grande partie du potentiel \u00e9nerg\u00e9tique inh\u00e9rent au soja reste inaccessible \u00e0 l&rsquo;animal.<\/p>\n<p><strong>Le temps de traitement est aussi important que la temp\u00e9rature<\/strong><\/p>\n<p>L&rsquo;un des facteurs les plus n\u00e9glig\u00e9s dans la transformation du soja est le temps de s\u00e9jour.
