Il s&rsquo;agit d&rsquo;outils bien \u00e9tablis dans l&rsquo;industrie, deux des m\u00e9thodes les plus courantes pour les ingr\u00e9dients de soja \u00e9tant les tests colorim\u00e9triques et le NIR (Near-Infrared Reflectance).<\/p>\n<p>L&rsquo;une des m\u00e9thodes les plus utilis\u00e9es est le test colorim\u00e9trique, qui \u00e9value l&rsquo;activit\u00e9 de l&rsquo;ur\u00e9ase dans la farine de soja brute et transform\u00e9e. L&rsquo;activit\u00e9 de l&rsquo;ur\u00e9ase est l&rsquo;un des indicateurs d&rsquo;un traitement thermique ad\u00e9quat. Un \u00e9chantillon de soja extrud\u00e9 est ajout\u00e9 \u00e0 un plat, puis un substrat color\u00e9 est introduit. En 5 minutes ou moins, l&rsquo;\u00e9chantillon change de couleur en r\u00e9ponse \u00e0 l&rsquo;activit\u00e9 de l&rsquo;ur\u00e9ase &#8211; voir la photo ci-dessous.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.insta-pro.com\/wp-content\/uploads\/2025\/04\/urease-liquid-test-diagram.png\" \/><\/p>\n<p>L&rsquo;avantage de cette m\u00e9thode est la simplicit\u00e9 et la facilit\u00e9 du test qui permet de d\u00e9terminer rapidement si l&rsquo;activit\u00e9 ur\u00e9asique est pr\u00e9sente ou non. Toutefois, le principal inconv\u00e9nient de ce processus est qu&rsquo;il ne permet pas de quantifier la quantit\u00e9 d&rsquo;ur\u00e9ase restante. En outre, l&rsquo;ur\u00e9ase seule ne peut pas \u00eatre un bon indicateur de l&rsquo;activit\u00e9 d&rsquo;autres antinutriments, tels que les inhibiteurs de la trypsine, de sorte que le test de l&rsquo;ur\u00e9ase seul ne peut pas garantir pleinement que la farine de soja a \u00e9t\u00e9 correctement trait\u00e9e.<\/p>\n<p>Une autre m\u00e9thode couramment utilis\u00e9e est l&rsquo;analyse par r\u00e9flectance dans le proche infrarouge (NIR), qui permet d&rsquo;estimer la composition chimique (c&rsquo;est-\u00e0-dire l&rsquo;humidit\u00e9, la teneur en mati\u00e8res grasses, en prot\u00e9ines, en fibres et en amidon) \u00e0 l&rsquo;aide d&rsquo;un petit appareil ou d&rsquo;un capteur. Ces donn\u00e9es peuvent ensuite \u00eatre export\u00e9es et des rapports peuvent \u00eatre g\u00e9n\u00e9r\u00e9s \u00e0 partir des r\u00e9sultats. Le principal avantage de l&rsquo;analyse NIR r\u00e9side dans les donn\u00e9es en temps r\u00e9el, qui permettent aux transformateurs de d\u00e9tecter les changements dans leur produit fini et de proc\u00e9der aux ajustements n\u00e9cessaires sur place.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.insta-pro.com\/wp-content\/uploads\/2025\/04\/nir-analysis-diagram.jpg\" \/><\/p>\n<p>De nombreuses entreprises utilisent d\u00e9sormais des analyseurs NIR dans leur cha\u00eene de traitement, ce qui leur permet d&rsquo;avoir un retour d&rsquo;information constant et en direct. Cela permet une analyse plus rapide que les tests NIR typiques effectu\u00e9s sur un banc d&rsquo;essai. Malgr\u00e9 la rapidit\u00e9 de l&rsquo;analyse des donn\u00e9es, l&rsquo;inconv\u00e9nient des tests NIR r\u00e9side dans l&rsquo;\u00e9talonnage, car ses valeurs ne sont que des estimations. Et en tant qu&rsquo;estimations, l&rsquo;\u00e9talonnage est sensible aux changements dans l&rsquo;\u00e9chantillon, tels que la temp\u00e9rature, la couleur, la taille des particules, etc. Les analyseurs NIR ne disposent donc pas d&rsquo;un mod\u00e8le d&rsquo;\u00e9talonnage universel, ce qui peut entra\u00eener des probl\u00e8mes de pr\u00e9cision dans les r\u00e9sultats.<\/p>\n<p>Toutefois, les progr\u00e8s constants de l&rsquo;analyse NIR permettent d&rsquo;am\u00e9liorer ses points faibles :<\/p>\n<p>&#8211; Des vitesses de balayage plus rapides : Les capteurs NIR modernes en ligne peuvent fournir un balayage chimique complet toutes les 1 \u00e0 2 secondes, ce qui am\u00e9liore consid\u00e9rablement la r\u00e9activit\u00e9.<br \/>\n&#8211; Des biblioth\u00e8ques d&rsquo;\u00e9talonnage plus larges : Certains fournisseurs proposent d\u00e9sormais des biblioth\u00e8ques d&rsquo;\u00e9talonnage pr\u00e9construites sp\u00e9cialement pour les ingr\u00e9dients \u00e0 base de soja, ce qui r\u00e9duit les temps d&rsquo;\u00e9talonnage.<br \/>\n&#8211; Capteurs autonettoyants : Certains mod\u00e8les r\u00e9cents comprennent des optiques autonettoyantes pour emp\u00eacher l&rsquo;accumulation de poussi\u00e8re ou de d\u00e9bris \u00e0 l&rsquo;int\u00e9rieur de l&rsquo;\u00e9quipement, ce qui pourrait nuire \u00e0 la pr\u00e9cision des mesures.<\/p>\n<p>Pour surmonter certains des inconv\u00e9nients mis en \u00e9vidence ci-dessus, les pratiques \u00e9tablies, telles que le maintien de param\u00e8tres d&rsquo;exploitation coh\u00e9rents et la v\u00e9rification des r\u00e9sultats par la validation en laboratoire, restent essentielles.
