d\u00e9tail le proc\u00e9d\u00e9 et la mani\u00e8re d&rsquo;obtenir un produit de qualit\u00e9.<\/p>\n<p>La base d&rsquo;un produit \u00e0 base de PST r\u00e9ussi commence par des mati\u00e8res premi\u00e8res riches en prot\u00e9ines.<br \/>\n         L&rsquo;utilisation de la farine de soja ExPress\u00ae est id\u00e9ale pour les PST de haute qualit\u00e9, car elle est naturellement pauvre en mati\u00e8res grasses et conserve des prot\u00e9ines de haute qualit\u00e9.<br \/>\n         Pour optimiser la farine en vue de sa texturation, il est essentiel de contr\u00f4ler la teneur en prot\u00e9ines, en fibres, en mati\u00e8res grasses, la taille des particules et l&rsquo;indice de dispersibilit\u00e9 des prot\u00e9ines (PDI).<br \/>\n         La farine de soja \u00e0 haute teneur en prot\u00e9ines et \u00e0 PDI \u00e9lev\u00e9 texturera plus efficacement, produisant ainsi un produit de qualit\u00e9 sup\u00e9rieure.<br \/>\n         Il est essentiel d&rsquo;augmenter les taux de prot\u00e9ines en \u00e9liminant les fibres et les graisses.<br \/>\n         L&rsquo;\u00e9limination des fibres est r\u00e9alis\u00e9e par d\u00e9corticage afin de s\u00e9parer la coque externe pr\u00e9cis de la chaleur, du temps et de l&rsquo;humidit\u00e9 afin d&rsquo;obtenir la texture et la structure id\u00e9ales.<br \/>\n         Un pr\u00e9conditionneur est utilis\u00e9 pour m\u00e9langer uniform\u00e9ment la farine de soja, les ingr\u00e9dients secs suppl\u00e9mentaires, l&rsquo;eau et la vapeur, garantissant ainsi l&rsquo;homog\u00e9n\u00e9it\u00e9 avant
