Selon une r\u00e9cente \u00e9tude de Bloomberg, les prot\u00e9ines pourraient constituer 7,7% du march\u00e9 global des prot\u00e9ines \u2013 avec une pr\u00e9vision de croissance de potentiel de revenus de 29,4 milliards de dollars US en 2020 \u00e0 plus de 162 milliards de dollars US d&rsquo;ici 2030.<\/p>\n<p>La m\u00e9thode de transformation des ingr\u00e9dients tient compte de la demande du march\u00e9 pour des produits alimentaires plus nutritifs et respectueux de l&rsquo;environnement. La transformation traditionnelle du soja implique l&rsquo;utilisation d&rsquo;hexane \u2013 un produit chimique identifi\u00e9 par l&rsquo;Agence am\u00e9ricaine pour la protection de l&rsquo;environnement (EPA) comme un polluant atmosph\u00e9rique avec une nocivit\u00e9 potentielle pour la sant\u00e9 humaine \u2013 pour extraire l&rsquo;huile de la farine. Une transformation m\u00e9canique par une extrusion \u00e0 sec \u00e0 haut cisaillement cuit le soja sous l&rsquo;effet de la chaleur g\u00e9n\u00e9r\u00e9e par cisaillement m\u00e9canique. La transformation du soja par extrusion \u00e0 sec \u00e0 haut cisaillement a \u00e9t\u00e9 bien accept\u00e9e en tant que solution durable et de haute qualit\u00e9 pour la transformation des ingr\u00e9dients du soja. La cr\u00e9ation de prot\u00e9ines v\u00e9g\u00e9tales textur\u00e9es de qualit\u00e9, notamment les prot\u00e9ines de soja textur\u00e9es &#8211; ou TSP &#8211; commence par l&rsquo;utilisation d&rsquo;une farine de soja de qualit\u00e9.<\/p>\n<p>Ensuite, une meilleure stabilit\u00e9 d&rsquo;huile&lt;\/g&gt; due \u00e0 la d\u00e9sactivation de la lipoxyg\u00e9nase et autres enzymes d\u00e9gradant les lipides favorise une longue dur\u00e9e de conservation. Des \u00e9tudes r\u00e9centes sur la dur\u00e9e de conservation ont \u00e9tabli que la farine de soja ExPress\u00ae et les TSP peuvent \u00eatre conserv\u00e9es au maximum 1,7 ann\u00e9e \u00e0 20 degr\u00e9s Celsius (68 degr\u00e9s Fahrenheit) selon une \u00e9tude men\u00e9e par le Centre de recherche sur l&rsquo;exploitation des cultures de l&rsquo;Universit\u00e9 d&rsquo;\u00c9tat de l&rsquo;Iowa.<\/p>\n<p>En dernier lieu, les TSP obtenues \u00e0 partir de la farine de soja ExPress\u00ae &#8211; avec g\u00e9n\u00e9ralement 6% \u00e0 8% d&rsquo;huile r\u00e9siduelle &#8211; pr\u00e9sentent une densit\u00e9 de produit plus \u00e9lev\u00e9e, ce qui se traduit par une palatabilit\u00e9 ou une sensation en bouche, une couleur claire des TSP et un poids multipli\u00e9 par 3 ou 4 dans l&rsquo;absorption d&rsquo;eau. Ces caract\u00e9ristiques sont en accord avec un produit TSP plus dense d\u00e9sirable pour les aliments v\u00e9g\u00e9taux.<\/p>\n<p>Une analyse sensorielle r\u00e9alis\u00e9e par l&rsquo;Universit\u00e9 de l&rsquo;Illinois a \u00e9valu\u00e9 du chili \u00e9labor\u00e9 avec des TSP obtenues par un processus d&rsquo;extrusion d&rsquo;Insta-Pro\u00ae par rapport \u00e0 des TSP commerciales obtenues par un processus d&rsquo;extraction \u00e0 l&rsquo;hexane. Les r\u00e9sultats ont d\u00e9montr\u00e9 que le \u00ab chili \u00bb avec les TSP extrud\u00e9es avait une meilleure sensation en bouche que les TSP extraites \u00e0 l&rsquo;hexane. Par ailleurs, aucune pr\u00e9f\u00e9rence de go\u00fbt n&rsquo;a \u00e9t\u00e9 d\u00e9termin\u00e9e, selon la transformation des TSP, qu&rsquo;elles soient extraites \u00e0 l&rsquo;hexane ou extrud\u00e9es.
