On m\u2019a demand\u00e9 r\u00e9cemment quelle est la diff\u00e9rence entre une extrusion \u00e0 sec \u00e0 cisaillement \u00e9lev\u00e9 et les autres m\u00e9thodes de transformation. On pense que tous les proc\u00e9d\u00e9s d\u2019extrusion sont les m\u00eames. N\u00e9anmoins, il existe de nombreuses diff\u00e9rences.<\/p>\n<p>En premier lieu, la qualit\u00e9 est essentielle. Pendant des d\u00e9cennies, les composants internes d\u2019une extrudeuse \u00e0 sec \u00e0 cisaillement \u00e9lev\u00e9 \u00e9taient pratiquement les m\u00eames et c\u2019est cette caract\u00e9ristique qui change aujourd\u2019hui. Si les pi\u00e8ces sont remplac\u00e9es au fur et \u00e0 mesure qu\u2019elles sont us\u00e9es et si les param\u00e8tres de contr\u00f4le de la qualit\u00e9 sont observ\u00e9s (c.-\u00e0-d. si la temp\u00e9rature d\u2019extrusion est contr\u00f4l\u00e9e, etc.), on obtient un tourteau de soja de haute qualit\u00e9. Le contr\u00f4le de la temp\u00e9rature d\u2019extrusion se fait en s\u2019assurant que la taille des particules est homog\u00e8ne, que les niveaux d\u2019humidit\u00e9 sont constants et appropri\u00e9s et que les grains sont de bonne qualit\u00e9 (non fendus). Le tourteau de soja ExPress\u00ae et\/ou le tourteau de soja riche en mati\u00e8res grasses sont aussi tr\u00e8s homog\u00e8nes et sup\u00e9rieurs au tourteau de soja extrait par solvant et autres m\u00e9thodes de transformation. Cette qualit\u00e9 a \u00e9t\u00e9 test\u00e9e avec succ\u00e8s via le meilleur indicateur : la digestibilit\u00e9 des nutriments et la performance des ingr\u00e9dients extrud\u00e9s \u00e0 sec avec cisaillement \u00e9lev\u00e9 pour l\u2019alimentation des animaux.<\/p>\n<p>Les diff\u00e9rences en termes de qualit\u00e9 n\u2019ont pas \u00e9t\u00e9 seulement d\u00e9montr\u00e9es avec l\u2019alimentation <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/32658295\/\">des porcs<\/a> ou <a href=\"https:\/\/www.insta-pro.com\/en\/blog\/nutritionandtechnologies\/increase-revenue-profit\/\">des poulets de chair<\/a> avec du tourteau de soja ExPress\u00ae par rapport \u00e0 un tourteau de soja extrait par solvant. De fait, en comparant la valeur nutritionnelle du soja transform\u00e9 par extrusion \u00e0 sec \u00e0 cisaillement \u00e9lev\u00e9\/extraction m\u00e9canique de l\u2019huile avec d\u2019autres proc\u00e9d\u00e9s m\u00e9caniques, des diff\u00e9rences sont observ\u00e9es en termes de digestibilit\u00e9 des acides amin\u00e9s pour les poulets de chair selon <a href=\"https:\/\/www.insta-pro.com\/en\/blog\/nutritionandtechnologies\/antinutrients-part-ii-variation-among-mechanically-processed-soy-products\/\">les valeurs d\u00e9termin\u00e9es<\/a> par Dr. Carl Parsons, University of IL. La digestibilit\u00e9 de la m\u00e9thionine et de la lysine qui r\u00e9duisent les acides amin\u00e9s, est plus \u00e9lev\u00e9e chez les poulets de chair nourris avec ExPress\u00ae. En outre, une <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/32437583\/\">\u00e9tude<\/a> r\u00e9alis\u00e9e avec un \u00e9levage de porcs a compar\u00e9 la digestibilit\u00e9 des acides amin\u00e9s des f\u00e8ves de soja grill\u00e9es et riches en mati\u00e8res grasses et ExPress\u00ae a d\u00e9montr\u00e9 que la digestibilit\u00e9 de la lysine chez les porcs nourris avec le tourteau de soja ExPress\u00ae \u00e9tait significativement diff\u00e9rente pour les porcs nourris avec des f\u00e8ves de soja grill\u00e9es (89,6% contre 84,4%).<\/p>\n<p>Dans cette \u00e9tude, bien que le rapport <a href=\"https:\/\/www.insta-pro.com\/en\/blog\/nutritionandtechnologies\/lysine-to-protein-ratio-an-indicator-to-estimate-heat-damage-in-processed-ingredients\/\">lysine\/prot\u00e9ines<\/a> f\u00fbt tr\u00e8s similaire pour les deux ingr\u00e9dients \u00e0 base de soja, ce qui indique l\u2019absence de dommage thermique, il existe une diff\u00e9rence \u00e9vidente en termes de valeur nutritionnelle.
