{"id":14962,"date":"2021-07-08T06:00:36","date_gmt":"2021-07-08T11:00:36","guid":{"rendered":"https:\/\/www.insta-pro.com\/?p=14962"},"modified":"2021-06-23T14:02:34","modified_gmt":"2021-06-23T19:02:34","slug":"abandonner-graduellement-les-proteines-brutes-encore-plus-de-preuves","status":"publish","type":"post","link":"https:\/\/instapro.spinuhost.com\/fr\/blog\/nutrition-et-technologies\/abandonner-graduellement-les-proteines-brutes-encore-plus-de-preuves\/","title":{"rendered":"Abandonner graduellement les prot\u00e9ines brutes : Encore plus de preuves"},"content":{"rendered":"<p>Pour ceux qui lisent le blog d\u2019Insta-Pro depuis des ann\u00e9es, cette id\u00e9e n\u2019est pas nouvelle, mais l\u2019objet de ce post, selon moi, est de d\u00e9battre des constatations r\u00e9centes que le recours aux valeurs des prot\u00e9ines brutes, en suivant <a href=\"https:\/\/en.wikipedia.org\/wiki\/Kjeldahl_method\">une technique de mesure obsol\u00e8te<\/a> datant des ann\u00e9es 1800, est une mauvaise id\u00e9e.<\/p>\n<p>Pour m\u00e9moire, il convient de tenir compte de ce qui suit :<\/p>\n<ul>\n<li>Ce sont les acides amin\u00e9s <a href=\"https:\/\/www.insta-pro.com\/en\/blog\/nutritionandtechnologies\/amino-acids-looking-beyond-protein-levels-for-animal-performance\/\">individuels<\/a> constituant les prot\u00e9ines du r\u00e9gime alimentaire, qui sont transform\u00e9es en tissus animaux.<\/li>\n<li>Le fait de mesurer la quantit\u00e9 de chaque acide amin\u00e9 dans les ingr\u00e9dients permet d\u2019\u00e9tablir des formulations de r\u00e9gime alimentaire bien plus pr\u00e9cises.<\/li>\n<li>Ce qui est encore plus important est que, <a href=\"https:\/\/www.insta-pro.com\/en\/blog\/nutritionandtechnologies\/total-lysine-is-not-related-to-digestible-lysine-in-commodity-hexane-soybean-meal\/\">le contenu digestible<\/a> d\u2019acides amin\u00e9s dans chaque ingr\u00e9dient, qui indique l\u2019utilit\u00e9 \u00e0 des fins productives, doit \u00eatre utilis\u00e9; toutefois pas la quantit\u00e9 totale qui vraisemblablement ne correspond pas du tout \u00e0 la quantit\u00e9 digestible.<\/li>\n<li>Un apport d\u2019acides amin\u00e9s dans les r\u00e9gimes alimentaires est toujours on\u00e9reux. La plupart des \u00e9valuations indiquent que, par unit\u00e9, les prot\u00e9ines sont le composant le plus on\u00e9reux des r\u00e9gimes alimentaires.<\/li>\n<li>Non seulement, un apport excessif d\u2019acides amin\u00e9s est de l\u2019argent perdu, mais peut <a href=\"https:\/\/www.insta-pro.com\/en\/blog\/nutritionandtechnologies\/excessive-protein-formulations\/\">aussi nuire<\/a> aux performances des animaux.<\/li>\n<\/ul>\n<p>Un article r\u00e9cemment <a href=\"https:\/\/www.mdpi.com\/2077-0472\/11\/4\/280\/htm\">publi\u00e9,<\/a> corrobore la preuve dont je fais mention plus haut et pr\u00e9conise aussi qu\u2019il ne faut plus tenir compte des valeurs des prot\u00e9ines brutes.<\/p>\n<p>L\u2019article en question examine un ensemble de donn\u00e9es sur des acides amin\u00e9s dans une farine de soja de base, avec extraction par solvant et compare les niveaux d\u2019acides amin\u00e9s individuels avec les valeurs des prot\u00e9ines brutes. Les donn\u00e9es sont pr\u00e9sent\u00e9es en fonction de la mati\u00e8re s\u00e8che, en partie pour minimiser le bruit dans les donn\u00e9es, et aussi, la farine de soja de base contient une grande quantit\u00e9 d\u2019eau, environ 11 \u00e0 12%.<\/p>\n<p>Les auteurs de cette \u00e9tude ont eu recours \u00e0 des techniques de mod\u00e9lisation diff\u00e9rentes, mais n\u2019ont jamais pu \u00e9tablir une corr\u00e9lation solide entre les niveaux des prot\u00e9ines brutes et les acides amin\u00e9s individuels. Par exemple, la <a href=\"https:\/\/en.wikipedia.org\/wiki\/Coefficient_of_determination\">valeur R<sup>2<\/sup> pour<\/a> la lysine n\u2019exc\u00e9dait jamais 0,51, ce qui indique une corr\u00e9lation tr\u00e8s faible ainsi qu\u2019une ad\u00e9quation m\u00e9diocre du mod\u00e8le. En bref, la quantit\u00e9 de prot\u00e9ines brutes dans la farine de soja de base en dit tr\u00e8s peu sur la quantit\u00e9 totale de lysine.<\/p>\n<p>Donc, lors de la formulation d\u2019un r\u00e9gime alimentaire, faut-il ajouter 2,270 kg de L-lysine pour compl\u00e9ter le r\u00e9gime ou 6,810 kg ? Si vous tenez seulement compte des prot\u00e9ines brutes, vous risquez tr\u00e8s probablement d\u2019obtenir des r\u00e9sultats erron\u00e9s.<\/p>\n<p>Il peut \u00eatre rentable de passer outre les prot\u00e9ines brutes lors de l\u2019\u00e9valuation des ingr\u00e9dients. Peut \u00eatre un ingr\u00e9dient de meilleure qualit\u00e9, comme de la farine de soja extrud\u00e9e \u00e0 sec avec haut cisaillement\/partiellement d\u00e9shuil\u00e9e, susceptible d\u2019\u00eatre inf\u00e9rieur aux prot\u00e9ines brutes, et peut faire la diff\u00e9rence avec <a href=\"https:\/\/www.insta-pro.com\/en\/blog\/nutritionandtechnologies\/properly-processed-express-soy-meal-maintains-high-digestibility-greater-metabolizable-energy\/\">des digestibilit\u00e9s accrues des acides amin\u00e9s<\/a>?
