Les ur\u00e9ases sont des FAN r\u00e9pandus, que l\u2019on trouve dans de nombreuses plantes et c\u00e9r\u00e9ales, mais notamment en quantit\u00e9s \u00e9lev\u00e9es dans les graines de soja, comme le d\u00e9crit <a href=\"https:\/\/www.intechopen.com\/books\/a-comprehensive-survey-of-international-soybean-research-genetics-physiology-agronomy-and-nitrogen-relationships\/soybean-urease-over-a-hundred-years-of-knowledge\">Takeuchi<\/a>. Le plus probl\u00e9matique est que l\u2019ur\u00e9ase et l\u2019inhibiteur de trypsine (IT) interf\u00e8rent avec la digestion des prot\u00e9ines dans le tube digestif des animaux. Une <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S0377840116301821?via%3Dihub\">\u00e9tude<\/a> r\u00e9cente s\u2019est pench\u00e9e sur la corr\u00e9lation entre anti-nutriments dans l\u2019alimentation et digestibilit\u00e9 des nutriments. \u00c0 mesure que les niveaux d\u2019anti-nutriments augmentaient, aussi bien les poulets que les porcs souffraient d\u2019une r\u00e9duction de la digestibilit\u00e9 des prot\u00e9ines et d\u2019une diminution de la prise alimentaire.<\/p>\n<p>Il est utile de mesurer le taux d\u2019ur\u00e9ase (TU) pour d\u00e9terminer si le tourteau de soja a \u00e9t\u00e9 chauff\u00e9 suffisamment pour d\u00e9sactiver les FAN.
