{"id":11774,"date":"2018-06-28T04:00:07","date_gmt":"2018-06-28T09:00:07","guid":{"rendered":"https:\/\/www.insta-pro.com\/?p=11774"},"modified":"2019-07-22T02:10:10","modified_gmt":"2019-07-22T07:10:10","slug":"duree-de-conservation-du-soja-non-deshuile","status":"publish","type":"post","link":"https:\/\/instapro.spinuhost.com\/fr\/blog\/nutrition-et-technologies\/duree-de-conservation-du-soja-non-deshuile\/","title":{"rendered":"Dur\u00e9e de conservation du soja non d\u00e9shuil\u00e9"},"content":{"rendered":"<p><span style=\"color: #000000;\"><span style=\"font-family: Calibri;\">Dans des articles de blog pass\u00e9s, j&rsquo;ai trait\u00e9 de la dur\u00e9e de conservation des prot\u00e9ines de soja textur\u00e9es, ainsi que de celle du tourteau ExPress<\/span><span style=\"margin: 0px; font-family: 'Times New Roman',serif;\">\u00ae<\/span><span style=\"font-family: Calibri;\"> et de la farine de soja ExPress<\/span><span style=\"margin: 0px; font-family: 'Times New Roman',serif;\">\u00ae<\/span><span style=\"font-family: Calibri;\">.&#160; Cependant, j&rsquo;ai oubli\u00e9 de parler de la dur\u00e9e de conservation du soja extrud\u00e9 non d\u00e9shuil\u00e9 (EFFS). <\/span><\/span><\/p>\n<p><span style=\"font-family: Calibri;\"><span style=\"color: #000000;\">J&rsquo;ai r\u00e9cemment rendu visite \u00e0 un client en Am\u00e9rique du Sud, qui envisage d\u2019exporter du soja non d\u00e9shuil\u00e9 par la route vers un pays voisin.&#160; Il est pr\u00e9occup\u00e9 par le taux d&rsquo;humidit\u00e9, et aimerait savoir si le soja r\u00e9sistera au voyage et restera un ingr\u00e9dient frais de grande qualit\u00e9.&#160; Je lui ai dit que le soja extrud\u00e9 non d\u00e9shuil\u00e9 a une longue dur\u00e9e de conservation s\u2019il est correctement extrud\u00e9 (\u00e0 la bonne temp\u00e9rature) et stock\u00e9 (\u00e0 l&rsquo;abri de la lumi\u00e8re, de l&rsquo;eau et de la chaleur).&#160; L&rsquo;une des principales raisons est qu&rsquo;il a un taux d\u2019humidit\u00e9 tr\u00e8s faible (~5-7&#160;% apr\u00e8s extrusion) et un taux d\u2019acides gras libres tr\u00e8s faible (~1&#160;%). <\/span><\/span><\/p>\n<p><span style=\"color: #000000; font-family: Calibri;\">Notre client a compris qu&rsquo;un tourteau sec plus dense pr\u00e9sente un avantage nutritionnel et qu\u2019il est mieux pr\u00e9dispos\u00e9 au transport, mais il s\u2019est alors montr\u00e9 pr\u00e9occup\u00e9 par la diminution de taille du produit suite \u00e0 la perte d&rsquo;humidit\u00e9 lors du processus d&rsquo;extrusion.&#160; Il allait se trouver en concurrence avec du soja extrud\u00e9 non d\u00e9shuil\u00e9 produit localement, dans lequel ils ajoutent de l&rsquo;eau apr\u00e8s l&rsquo;extrusion pour atteindre un niveau d&rsquo;humidit\u00e9 de 10&#160;%, ce qui revient essentiellement \u00e0 diluer leur produit. Insta-Pro recommande de ne pas ajouter de l&rsquo;eau au soja non d\u00e9shuil\u00e9, en raison du risque d&rsquo;ajouter des contaminants, des bact\u00e9ries, de la moisissure, etc.&#160; Ce que le client doit faire, c\u2019est informer ses propres clients que son produit est plus dense et contient des ingr\u00e9dients de meilleure qualit\u00e9, et qu\u2019ils n\u2019ach\u00e8tent pas de l&rsquo;eau au prix du soja extrud\u00e9 non d\u00e9shuil\u00e9. <\/span><\/p>\n<p><span style=\"color: #000000; font-family: Calibri;\">En ce qui concerne la dur\u00e9e de vie du soja extrud\u00e9 non d\u00e9shuil\u00e9, le produit change au fil du temps, comme tout autre produit, mais l\u2019extrusion \u00e0 sec \u00e0 cisaillement \u00e9lev\u00e9 lui conf\u00e8re un \u00e9tat stable permettant de le conserver pendant au moins 9&#160;mois. <\/span><\/p>\n<p><span style=\"color: #000000; font-family: Calibri;\">La Wisconsin Alumni Foundation a \u00e9tudi\u00e9 la dur\u00e9e de conservation du soja non d\u00e9shuil\u00e9 sur une p\u00e9riode de 9&#160;mois avec un stockage \u00e0 des temp\u00e9ratures et une humidit\u00e9 relative \u00e9lev\u00e9es. Elle a ainsi test\u00e9 des \u00e9chantillons \u00e0 37,8&#160;<\/span><b><span style=\"margin: 0px; color: #444444; line-height: 107%; font-family: 'Segoe UI',sans-serif; font-size: 13.5pt;\">\u00b0<\/span><\/b><span style=\"color: #000000;\"><b> <\/b><span style=\"font-family: Calibri;\">C et 45&#160;% &#160;d\u2019humidit\u00e9 relative, ainsi qu\u2019\u00e0 45&#160;\u00b0C et 25&#160;%.
