Determinados ingredientes pueden verse afectados de forma negativa por el calor y la presi\u00f3n generados durante la extrusi\u00f3n. En este blog, analizar\u00e9 algunos ejemplos para darle una idea de lo que puede sucederles a los ingredientes y las formas de solucionar o minimizar los efectos.<\/p>\n<p>Los ingredientes m\u00e1s importantes que pueden resultar afectados con la extrusi\u00f3n son las vitaminas. Las vitaminas pueden ser algo fr\u00e1giles y tener una vida \u00fatil corta, incluso sin someterse a la extrusi\u00f3n. Un ejemplo es la vitamina C, especialmente sensible al calor. La p\u00e9rdida experimentada durante la extrusi\u00f3n puede superarse al agregar a la formulaci\u00f3n un 25\u00a0% m\u00e1s que la dosificaci\u00f3n normal. Otra opci\u00f3n es usar lo que se conoce como vitamina C protegida. Hay varios tipos en el mercado que funcionan bien con la extrusi\u00f3n. La vitamina C protegida se dise\u00f1\u00f3 originalmente para usar en molinos de gr\u00e1nulos ya que tiene un recubrimiento protector que disminuye los efectos adversos del calor y la presi\u00f3n. Otra forma de evitar que la calidad de las vitaminas resulte afectada, en algunos casos, puede ser agregarlas en la postextrusi\u00f3n con una mezclador o rociador. En algunos casos, como en el caso de los productos con forma, debe suspenderse en la mezcla preextruida. En general, lo ideal es consultar con la empresa que fabrica las vitaminas sus preocupaciones asociadas con el proceso ya que le pueden proporcionar informaci\u00f3n sobre la estabilidad de la vitamina en relaci\u00f3n con sus necesidades.<\/p>\n<p>Otro ejemplo de ingredientes que no toleran el calor y la presi\u00f3n de la extrusi\u00f3n son los probi\u00f3ticos. Como los probi\u00f3ticos son bacterias vivas, no sobreviven el proceso de extrusi\u00f3n. La aplicaci\u00f3n posterior es la \u00fanica forma de incluir probi\u00f3ticos en el producto terminado sin afectar de forma negativa su calidad. A menudo, el probi\u00f3tico se suspende en un l\u00edquido o posiblemente un aceite vegetal y se roc\u00eda, procedimiento similar a la aplicaci\u00f3n postextrusi\u00f3n de grasa en los alimentos para mascotas.<\/p>\n<p>A la hora de incluir diferentes ingredientes en la formulaci\u00f3n, no solo debe tomar en cuenta su sensibilidad al calor y la presi\u00f3n, sino tambi\u00e9n c\u00f3mo eso puede afectar la calidad del producto final.
