UU. Y con esas asociaciones, una pregunta que suelo escuchar de los procesadores de soya es: \u201c\u00bfCu\u00e1l es la diferencia del producto y el proceso entre una <strong>extrusora<\/strong> y un <strong>expansor<\/strong>?\u201d<\/p>\n<p>Un expansor es similar a una extrusora, pero genera menos corte, presi\u00f3n y temperatura en el barril. Algunos fabricantes usan el t\u00e9rmino <em>extrusi\u00f3n<\/em> para describir el mismo proceso que la expansi\u00f3n porque se pasa el producto por un troquel. Sin embargo, la extrusi\u00f3n crea una fuerza de fricci\u00f3n que es un factor clave para la inactivaci\u00f3n de los factores antinutricionales, la esterilizaci\u00f3n microbiana, la liberaci\u00f3n de antioxidantes naturales y, en \u00faltima instancia, el aumento de la digestibilidad de los nutrientes.<\/p>\n<p>Solemos asociarnos con universidades para realizar ensayos de investigaci\u00f3n con el fin de comprender la diferencia en los procesos. En el siguiente gr\u00e1fico puede verse un ejemplo de comparaci\u00f3n entre la extrusi\u00f3n y la expansi\u00f3n, y se muestra la digestibilidad de los amino\u00e1cidos de la soya integral con que se alimenta a los pollos. Al comparar la extrusi\u00f3n de alta fricci\u00f3n con la expansi\u00f3n, los resultados muestran un 8 % menos de digestibilidad de amino\u00e1cidos de la soya integral.
