{"id":14964,"date":"2021-07-08T06:00:36","date_gmt":"2021-07-08T11:00:36","guid":{"rendered":"https:\/\/www.insta-pro.com\/?p=14964"},"modified":"2021-07-08T06:00:36","modified_gmt":"2021-07-08T11:00:36","slug":"alejamiento-de-la-proteina-bruta-mas-pruebas","status":"publish","type":"post","link":"https:\/\/instapro.spinuhost.com\/es\/blog\/nutricion-tecnologia\/alejamiento-de-la-proteina-bruta-mas-pruebas\/","title":{"rendered":"Alejamiento de la prote\u00edna bruta: M\u00e1s pruebas"},"content":{"rendered":"<p>Esta idea no es nueva para los lectores del blog de Insta-Pro, sin embargo, la finalidad de esta publicaci\u00f3n es explicar, desde mi punto de vista, las \u00faltimas pruebas que demuestran que depender demasiado de los valores de la prote\u00edna bruta usando una <a href=\"https:\/\/en.wikipedia.org\/wiki\/Kjeldahl_method\">antigua t\u00e9cnica de medici\u00f3n<\/a> que surgi\u00f3 aproximadamente en el a\u00f1o 1800 es una mala idea.<\/p>\n<p>A modo de repaso, considere lo siguiente:<\/p>\n<ul>\n<li>Son los <a href=\"https:\/\/www.insta-pro.com\/en\/blog\/nutritionandtechnologies\/amino-acids-looking-beyond-protein-levels-for-animal-performance\/\">amino\u00e1cidos<\/a> individuales que crean las prote\u00ednas en las dietas los que se convierten en tejidos animales.<\/li>\n<li>Medir la cantidad de cada amino\u00e1cido individual en los ingredientes permite formulaciones diet\u00e9ticas mucho m\u00e1s precisas.<\/li>\n<li>Todav\u00eda m\u00e1s importante, debe usarse el contenido <a href=\"https:\/\/www.insta-pro.com\/en\/blog\/nutritionandtechnologies\/total-lysine-is-not-related-to-digestible-lysine-in-commodity-hexane-soybean-meal\/\">digestible<\/a> de amino\u00e1cidos en cada ingrediente, el cual indica la utilidad para fines productivos, y no la cantidad total, la cual podr\u00eda no estar relacionada de ning\u00fan modo con la cantidad digestible.<\/li>\n<li>Suministrar amino\u00e1cidos en las dietas es siempre caro. La mayor\u00eda de las evaluaciones indican que, por unidad, la prote\u00edna es el componente m\u00e1s caro de las dietas.<\/li>\n<li>Un suministro excesivo de amino\u00e1cidos no solamente ser\u00e1 un despilfarro <a href=\"https:\/\/www.insta-pro.com\/en\/blog\/nutritionandtechnologies\/excessive-protein-formulations\/\">sino que adem\u00e1s puede resultar perjudicial<\/a> para el rendimiento del animal.<\/li>\n<\/ul>\n<p>Un art\u00edculo publicado <a href=\"https:\/\/www.mdpi.com\/2077-0472\/11\/4\/280\/htm\">recientemente<\/a> es la \u00faltima evidencia a lo anteriormente mencionado y transmite el mismo mensaje: debemos dejar de basarnos en los valores de las prote\u00ednas brutas.<\/p>\n<p>El art\u00edculo en cuesti\u00f3n us\u00f3 un conjunto de datos sobre los amino\u00e1cidos en harina de soya b\u00e1sica extra\u00edda por solventes y los compar\u00f3 con los niveles de amino\u00e1cidos individuales de los valores de la prote\u00edna bruta. Los datos se expresaron en base a la materia seca, en parte probablemente para minimizar la corrupci\u00f3n de los datos y tambi\u00e9n la harina de soya que contenga mucha agua, normalmente entre el 11 y el 12 %.<\/p>\n<p>Los autores del estudio usaron distintas t\u00e9cnicas de modelado pero no fueron capaces de generar una fuerte correlaci\u00f3n entre los niveles de prote\u00edna bruta y los amino\u00e1cidos individuales. Por ejemplo, el <a href=\"https:\/\/en.wikipedia.org\/wiki\/Coefficient_of_determination\">valor<sup>2<\/sup> R<\/a> para la lisina nunca super\u00f3 0,51, lo cual indica una correlaci\u00f3n muy d\u00e9bil y una mala adaptaci\u00f3n del modelo. En resumen, la cantidad de prote\u00edna bruta en la harina de soya a penas est\u00e1 relacionada con la cantidad total de lisina.<\/p>\n<p>Por lo tanto, al formular una dieta, \u00bfdebe a\u00f1adir 5 o 15 lb de L-lisina a la dieta? Si se basa solamente en la prote\u00edna bruta, lo m\u00e1s probable es que falle.<\/p>\n<p>Al evaluar los ingredientes, merece la pena ir m\u00e1s all\u00e1 de la prote\u00edna bruta. \u00bfPuede un ingrediente de mejor calidad como la harina de soya extruida en seco con alta fricci\u00f3n y parcialmente desaceitada, la cual puede tener menos prote\u00edna bruta, compensar la diferencia con <a href=\"https:\/\/www.insta-pro.com\/en\/blog\/nutritionandtechnologies\/properly-processed-express-soy-meal-maintains-high-digestibility-greater-metabolizable-energy\/\">la mayor digestibilidad de amino\u00e1cidos?<\/a>?
