previo a la extrusi\u00f3n"},"content":{"rendered":"<p>Recientemente tuve la oportunidad de asistir a una conferencia sobre extrusi\u00f3n en Argentina y me preguntaron qu\u00e9 opinaba sobre el calentamiento previo de la soya antes de la extrusi\u00f3n.\u00a0 Aparentemente, hay quienes compran precalentadores y luego llevan a cabo la extrusi\u00f3n a fin de alcanzar niveles aceptables de ureasa y tripsina para vender su producto en el mercado local.\u00a0 Respond\u00ed que el precalentador era innecesario en la extrusi\u00f3n seca de alta fricci\u00f3n de Insta-Pro gracias a que podemos alcanzar altos niveles de temperatura en poco tiempo y tener un bajo nivel de actividad de tripsina y ureasa.\u00a0 Adem\u00e1s, en el proceso de calentamiento previo, se somete a la soya al calor por un per\u00edodo demasiado extenso que la cocina en exceso aunque la temperatura sea baja.\u00a0 Los investigadores Rutherford y Moughan demostraron el problema que esto conlleva en la siguiente prueba, donde se evidenci\u00f3 que el tratamiento con calor, aunque sea solo por pocos minutos, redujo la digestibilidad de la lisina, la cual, sin duda alguna, es importante en las dietas comerciales dado que es un factor fundamental para el crecimiento animal.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-12438 aligncenter\" src=\"https:\/\/www.insta-pro.com-content\/uploads\/2019\/02\/Adam-Graph.png\" alt=\"\" width=\"617\" height=\"465\" srcset=\"https:\/\/instapro.spinuhost.com\/wp-content\/uploads\/2019\/02\/Adam-Graph.png 617w, https:\/\/instapro.spinuhost.com\/wp-content\/uploads\/2019\/02\/Adam-Graph-300x226.png 300w, https:\/\/instapro.spinuhost.com\/wp-content\/uploads\/2019\/02\/Adam-Graph-564x425.png 564w\" sizes=\"auto, (max-width: 617px) 100vw, 617px\" \/><\/p>\n<p>Le aconsejo que, si una empresa le obliga a usar un precalentador, solicite la investigaci\u00f3n cient\u00edfica que demuestre que la calidad de la harina es la misma que la producida mediante la extrusi\u00f3n seca de alta fricci\u00f3n de Insta-Pro.\u00a0 Recuerde siempre que el hecho de que alguien diga que un proceso funciona no significa que sea cierto.\u00a0 Solicite evidencias.\u00a0 Y las evidencias se obtienen a trav\u00e9s de
