{"id":2233,"date":"2015-05-28T06:01:24","date_gmt":"2015-05-28T11:01:24","guid":{"rendered":"https:\/\/www.insta-pro.com\/?p=2233"},"modified":"2023-03-31T08:42:10","modified_gmt":"2023-03-31T13:42:10","slug":"chipotle-understands-final-products-are-only-as-good-as-their-raw-materials","status":"publish","type":"post","link":"https:\/\/instapro.spinuhost.com\/en\/blog\/businessstrategyandfinance\/chipotle-understands-final-products-are-only-as-good-as-their-raw-materials\/","title":{"rendered":"Chipotle Understands Final Products Are Only as Good as Their Raw Materials"},"content":{"rendered":"<p><a href=\"https:\/\/chipotle.com\/home\">Chipotle Mexican Grill<\/a> recently announced that they had <a href=\"http:\/\/www.nytimes.com\/2015\/04\/27\/business\/chipotle-to-stop-serving-genetically-altered-food.html?_r=1\">completed their transition, with a few qualifiers<\/a>, to only using non-<a href=\"http:\/\/en.wikipedia.org\/wiki\/Genetically_modified_organism\">GMO<\/a> ingredients in their food products. \u00a0Interestingly, many of the responses were described as \u201c<a href=\"http:\/\/fafdl.org\/blog\/2015\/05\/05\/5-big-drivers-behind-the-chipotle-backlash\/\">backlash<\/a>\u201d, with the exception of one <a href=\"http:\/\/www.bloombergview.com\/articles\/2015-04-30\/chipotle-removes-gmos-to-show-it-cares\">reaction<\/a> that I believe showed a great deal of understanding with what Chipotle is doing.<\/p>\n<p>The best example of what\u2019s happening is found in <a href=\"http:\/\/www.nytimes.com\/2015\/04\/27\/business\/chipotle-to-stop-serving-genetically-altered-food.html?_r=1\">one recent article<\/a> &#8211; all of the items on Chipotle\u2019s menu come from 68 ingredients.\u00a0 Conversely, one of Chipotle\u2019s competitors markets a single burrito that contains 81 ingredients. \u00a0In short, Chipotle is limiting ingredients and marketing this approach to show they pay attention to consumer demands and know what is in their food.\u00a0 Earlier this year, Chipotle <a href=\"http:\/\/www.nytimes.com\/2015\/01\/15\/business\/after-suspending-supplier-chipotle-takes-pork-off-menu-in-600-stores.html\">removed pork carnitas<\/a> from approximately 600 restaurants when an audit revealed that the pork farm was not following the required standards. \u00a0Rather than find an \u201cinferior\u201d replacement, the menu was reduced until the farm could come back into compliance.<\/p>\n<p>Chipotle has followed a great business philosophy that is true for any human food, pet food or animal feed product; the product is only as good as the raw materials used to make them (see <a href=\"https:\/\/www.insta-pro.com\/2013\/12\/17\/perhaps-more-important-than-ever-to-make-quality-food-products\/\">here<\/a> and <a href=\"https:\/\/www.insta-pro.com\/2013\/10\/08\/opportunities-to-make-quality-pet-food\/\">here<\/a>).\u00a0 Also, the greater the number of ingredients used the more difficult it is to maintain quality \u2013 there is only so much time available to perform supplier audits and measure quality of incoming ingredients.<\/p>\n<p>I have seen this first hand in one company that was attempting to rapidly grow product lines by offering formulations with a host of different ingredients.\u00a0 There were constant battles between maintaining production volume and product quality.\u00a0 At times, a compromise was reached that minimally reduced quality in order to maintain production.<\/p>\n<p><a href=\"https:\/\/www.insta-pro.com\/\">Insta-Pro International<\/a> is also involved with non-GMO ingredient production.\u00a0 In particular, non-GMO <a href=\"http:\/\/en.wikipedia.org\/wiki\/Soybean\">soybeans<\/a>\u00a0can be processed using <a href=\"https:\/\/www.insta-pro.com\/products-services\/extruders.html\">high-shear dry extrusion<\/a> followed by <a href=\"https:\/\/www.insta-pro.com\/products-services\/presses.html\">mechanical oil pressing<\/a>. \u00a0This process will deactivate <a href=\"https:\/\/www.insta-pro.com\/2014\/04\/01\/the-role-of-anti-nutritional-factors-in-seeds-legumes\/\">naturally-occurring anti-nutritional factors in soybeans<\/a>\u00a0and rupture cell walls for isolation of a large percentage of <a href=\"http:\/\/www.iomsa.org\/leads\/OMGDec13.pdf\">oil<\/a> from the protein-containing meal.<\/p>\n<p>Because our equipment lines are chemical-free and allow for\u00a0identity preservation, we are becoming more involved in non-GMO soy production.\u00a0 As I\u2019ve <a href=\"https:\/\/www.insta-pro.com\/2014\/06\/05\/gmo-corn-for-ethanol-incoming-raw-materials-plans-more-important-than-ever\/\">blogged about previously<\/a>, current processing systems are not set up to segregate different types of grains or oilseeds.\u00a0 They are set up for high-volume commodities, not for ingredients with unique characteristics.<\/p>\n<p>What all this means is, it doesn&#8217;t matter if you operate a processing facility or restaurant. \u00a0It is important to work with a company that understands <a href=\"https:\/\/www.insta-pro.com\">their equipment<\/a>, how it is properly operated and final product performance (see <a href=\"https:\/\/www.insta-pro.com\/2013\/09\/10\/all-energy-sources-are-not-created-equal\/\">here<\/a> and <a href=\"https:\/\/www.insta-pro.com\/2013\/07\/16\/cheaper-ingredients-may-have-hidden-costs\/\">here<\/a>). \u00a0Businesses, like Chipotle, continue to grow by responding to current market demands and providing food and feed products that are made with quality ingredients. \u00a0Chipotle could take their quality standards one step farther and require their suppliers to raise their meat on a non-gmo diet. \u00a0For more nutritional information and advice, contact <a href=\"http:\/\/dalbin@insta-pro.com\">Dave Albin<\/a> or <a href=\"http:\/\/nsaid@insta-pro.com\">Nabil Said<\/a>.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Chipotle Mexican Grill recently announced that they had completed their transition, with a few qualifiers, to only using non-GMO ingredients in their food products. \u00a0Interestingly, many of the responses were described as \u201cbacklash\u201d, with the exception of one reaction that I believe showed a great deal of understanding with what Chipotle is doing.
