{"id":1458,"date":"2014-02-18T09:00:50","date_gmt":"2014-02-18T09:00:50","guid":{"rendered":"https:\/\/www.insta-pro.com\/?p=1458"},"modified":"2023-06-21T11:48:41","modified_gmt":"2023-06-21T16:48:41","slug":"extrusion-improves-cassava-based-products","status":"publish","type":"post","link":"https:\/\/instapro.spinuhost.com\/en\/blog\/nutritionandtechnologies\/extrusion-improves-cassava-based-products\/","title":{"rendered":"Extrusion Improves Cassava-Based Products"},"content":{"rendered":"<p><a href=\"http:\/\/en.wikipedia.org\/wiki\/Cassava\">Cassava<\/a> is a major root crop, grown mainly in the developing world.\u00a0 Cassava is mostly a source of starch, and has very little protein (<a href=\"http:\/\/en.wikipedia.org\/wiki\/Cassava#Comparison_with_other_major_staple_foods\">1.4% of raw cassava<\/a>).\u00a0 It is also low in certain micronutrients.\u00a0 As a result, cassava must be fed with other ingredients to avoid nutrient deficiencies.<\/p>\n<p><a href=\"http:\/\/en.wikipedia.org\/wiki\/Soybeans\">Soybeans<\/a> are a good choice for pairing with cassava, as they are an excellent source of protein and fatty acids from soybean oil.<\/p>\n<p>Extrusion processing, a globally-recognized procedure to make food and feed, has been shown here on the <a href=\"https:\/\/www.insta-pro.com\/\">Insta-Pro blog<\/a> before to be effective at making high-quality products (see <a href=\"https:\/\/www.insta-pro.com\/2013\/07\/16\/cheaper-ingredients-may-have-hidden-costs\/\">here<\/a>, <a href=\"https:\/\/www.insta-pro.com\/2013\/09\/10\/all-energy-sources-are-not-created-equal\/\">here<\/a>, <a href=\"https:\/\/www.insta-pro.com\/2013\/05\/28\/corn-extrusion-for-better-broiler-performance\/\">here<\/a>, <a href=\"https:\/\/www.insta-pro.com\/2012\/12\/19\/impact-of-extrusion-on-nutrientspart1\/\">here<\/a>, <a href=\"https:\/\/www.insta-pro.com\/2013\/01\/09\/impact-of-extrusion-on-nutrients-part-2-lipids-fats-and-water\/\">here<\/a>, and <a href=\"https:\/\/www.insta-pro.com\/2014\/01\/28\/extrusion-effects-on-fiber-challenges-and-opportunities\/\">here<\/a>).<\/p>\n<p>A recent <a href=\"http:\/\/repository.up.ac.za\/bitstream\/handle\/2263\/32939\/Mouki_Nutritional_2013.pdf?sequence=1\">PhD thesis from South Africa<\/a> examined the effect of extrusion and heating on cassava alone, and cassava blended with soy flours.\u00a0 In addition, a commercial, ready-to-eat food product was used as a standard.\u00a0 While the results of much R&amp;D were reported in this thesis, I will focus on the effect of extrusion and heating on protein digestibility.\u00a0 <a href=\"http:\/\/www.merriam-webster.com\/dictionary\/digestibility\">Digestibility<\/a> is a common measure of the amount of particular nutrient that exits the digestive tract and enters the body.\u00a0 In this case, digestibility was measured in the lab (called \u201cin vitro\u201d) after the extruded or heated cassava and soy products were exposed to enzymes, which are also present in the intestine and used for digestion.<\/p>\n<p>The effect of extrusion and heating (boiling for 20 minutes) on protein digestibility is shown in the graph below.<\/p>\n<p><a href=\"https:\/\/www.insta-pro.com-content\/uploads\/2014\/02\/Capture.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-1459\" src=\"https:\/\/www.insta-pro.com-content\/uploads\/2014\/02\/Capture-300x202.jpg\" alt=\"Capture\" width=\"374\" height=\"252\" \/><\/a><\/p>\n<p><i>*Commercial, ready-to-eat porridge used;
